Kothu Roti:
Ingredients:
๐น10 Paratha or chapatti cut into thin strips
๐นCooked beef curry or chicken curry.( you can check and add more)
๐น1/2 onions finely chopped
๐นSpring onions shredded (optional)
๐น1 green chilli, sliced
๐น 1 Shredded carrot
๐น 1/4 Shredded cabbage
๐น1 Leeks chopped
๐น2 -3 teaspoon s ginger and garlic paste
๐น5 eggs
๐นChopped cilantro (optional)
๐น1 teaspoon pepper powder
๐นSalt to taste
๐นOil
Method
๐นIn a large wok heat oil .
๐นAdd onions, stir it, add ginger and garlic paste Stir it,
๐น Add carrots and the other vegetables and salt.stir fry it for 2-3 minutes.
๐นnow add the eggs,sprinkle some pepper powder on top and scramble it.
๐น add the roti and mix together and if you have a sharpe edged vessel or a cookie cutter scramble everything together.
๐นadd the chicken pieces along with the gravy.
๐นdon’t add too much gravy it should be dry.
๐นmix everything nicely and when it’s hot switch off the fire.
๐นif you want sprinkle cilantro on top before serving.
