Kothu Roti:








Ingredients:
๐ŸŒน10 Paratha or chapatti cut into thin strips 
๐ŸŒนCooked beef  curry or chicken curry.( you can check and add more)
๐ŸŒน1/2 onions finely chopped 
๐ŸŒนSpring onions shredded (optional)
 ๐ŸŒน1 green chilli, sliced
๐ŸŒน 1 Shredded carrot
๐ŸŒน 1/4 Shredded cabbage
๐ŸŒน1 Leeks chopped 
๐ŸŒน2 -3 teaspoon s ginger and garlic paste 
๐ŸŒน5 eggs
๐ŸŒนChopped cilantro (optional)
๐ŸŒน1 teaspoon pepper powder 
๐ŸŒนSalt to taste
๐ŸŒนOil

Method

๐ŸŒนIn a large wok heat oil . 
๐ŸŒนAdd onions, stir it, add ginger and garlic paste Stir it, 
๐ŸŒน Add carrots and the other vegetables and salt.stir fry it for 2-3 minutes.
๐ŸŒนnow add the eggs,sprinkle some pepper powder on top and scramble it.
๐ŸŒน add the roti and mix together and if you have a sharpe edged vessel or a cookie cutter scramble everything together.
๐ŸŒนadd the chicken pieces along with the gravy.
๐ŸŒนdon’t add too much gravy it should be dry.
๐ŸŒนmix everything nicely and when it’s hot switch off the fire.
๐ŸŒนif you want sprinkle cilantro on top before serving.
