Kothu Roti:








Ingredients:
🌹10 Paratha or chapatti cut into thin strips 
🌹Cooked beef  curry or chicken curry.( you can check and add more)
🌹1/2 onions finely chopped 
🌹Spring onions shredded (optional)
 🌹1 green chilli, sliced
🌹 1 Shredded carrot
🌹 1/4 Shredded cabbage
🌹1 Leeks chopped 
🌹2 -3 teaspoon s ginger and garlic paste 
🌹5 eggs
🌹Chopped cilantro (optional)
🌹1 teaspoon pepper powder 
🌹Salt to taste
🌹Oil

Method

🌹In a large wok heat oil . 
🌹Add onions, stir it, add ginger and garlic paste Stir it, 
🌹 Add carrots and the other vegetables and salt.stir fry it for 2-3 minutes.
🌹now add the eggs,sprinkle some pepper powder on top and scramble it.
🌹 add the roti and mix together and if you have a sharpe edged vessel or a cookie cutter scramble everything together.
🌹add the chicken pieces along with the gravy.
🌹don’t add too much gravy it should be dry.
🌹mix everything nicely and when it’s hot switch off the fire.
🌹if you want sprinkle cilantro on top before serving.
