 Chicken Porridge Aka Kanji:(My Version)

๐Ÿฅฃ๐Ÿฅฃ๐Ÿฅฃ๐Ÿฅฃ๐Ÿฅฃ๐Ÿฅฃ๐Ÿฅฃ๐Ÿฅฃ๐Ÿฅฃ

Ingredients:


๐ŸŒท2 cups Rice 

(Red raw rice, basmati)

๐ŸŒท250g more or less Chicken cut into small chunks or with bone

๐ŸŒท7-8 Garlic Pods

๐ŸŒทCinnamon stick 

๐ŸŒท3-4 Cardamom Pods (optional)

๐ŸŒทCurry leaves , Rampe (optional)

๐ŸŒท1-2 teaspoons Fenugreek seeds

๐ŸŒท1/4 teaspoons Turmeric powder 

๐ŸŒท1-2 teaspoons Chili powder 

๐ŸŒท2 teaspoons Coriander powder 

๐ŸŒท1 Medium onion Chopped 

๐ŸŒท4-5 Cups Coconut Milk Or Fresh Milk

๐ŸŒท1/2 Tomato 

๐ŸŒท1-2 green Chillies

๐ŸŒท1/2 teaspoons Cumin powder 

๐ŸŒท1 carrot cut in to julienne

๐ŸŒท1 Leeks or spring onions thinly sliced 


Tempering ingredients;

๐ŸŒท1 tablespoon Oil

๐ŸŒท1-2 tablespoons Ginger and garlic paste

๐ŸŒทLittle onions 

๐ŸŒท1/2 teaspoons Chili powder (optional)

๐ŸŒทCoriander leaves chopped (optional)


Cooking Method 1️⃣


1️⃣Rinse the rice add it in a big pot , add all the ingredients except coconut milk  and little chopped onions. (Reserve it for tempering)

2️⃣Cook until the rice is cooked 

3️⃣Add the coconut milk and boil it well.


Tempering After the kanji is ready.

Add Oil to a frying pan,add the ginger and garlic paste,sautรฉ it add the onions carefully fry it in medium heat Until golden color. Add the coriander leaves,Little chili powder,Make sure not to burn the chili powder.Pour this into the kanji and serve hot!!


Cooking Method 2️⃣


1️⃣Add oil to a deep pan,when the oil is hot add the ginger and garlic paste sautรฉ it add little onions,cinnamon stick,add 1 teaspoon of chille powder.do this on low flame without burning the chili powder.

2️⃣Add the Chicken except the rice and the vegetables .Add water to Cook the chicken.Cook the chicken until tender.

3️⃣Cook the Rice separately with the  Carrot,leeks ,salt ,garlic and Fenugreek Seeds. 

4️⃣Mix both together and mash the rice a bit.

5️⃣Add thick coconut milk and thin coconut milk,adjust the consistency as for a porridge.Now switch on the fire and boil it well,Switch off the fire.

๐ŸŒนIf you cook the porridge this method you don’t have to temper it at the end.

๐ŸŒนYou can cook the second method,Meat and the rice together too.

first you temper then add the chicken and then add the washed rice and cook.then add the coconut milk boil it and serve hot.
