Dindigul Thalapakatti Chicken Biriyani:
For Biryani Masala
Ingredients:
❣️1 Star anise
❣️1 mace
❣️1 inch Cinnamon stick
❣️4 cardamom pods
❣️4 cloves
❣️1 teaspoon Cumin seeds
❣️1/2 teaspoon fennel seeds
❣️1 teaspoon pepper corns
❣️2 teaspoons coriander seeds
For Chicken Biryani,
Ingredients:
❤️2 Tablespoons Ghee (Clarified Butter)
❤️2 Tablespoons Oil
❤️2 bay leaves
❤️1 inch Cinnamon Stick
❤️200 g Onion
❤️2 Tablespoons Ginger Garlic paste
❤️3 green Chilies
❤️1/2 teaspoon Turmeric powder
❤️1-2 Tablespoons Red Chili Powder
❤️150g Tomato
❤️1/2 cup Yogurt / Curd
❤️Handfull coriander and Mint leaves
❤️500g Chicken
❤️2 cups Basmati rice
❤️3 cups Water
❤️Salt to Taste
Method:
1️⃣To make biryani masala grind cinnamon,star anise, mace, cloves, cardamom, fennel seeds, cumin seeds, pepper corns, coriander seeds into a fine powder.You can also dry roast the ingredients and then grind.
2️⃣In a rice cooker on a stove top heat equal quantities of oil and ghee,add 2 bay leaves,cinnamon stick and then add sliced onions,required salt and sauté until the onions are golden brown.
3️⃣Then add ginger garlic paste ,Slit Green chilies and cook until the raw smell goes.
4️⃣Add turmeric powder, Chili powder (as per your spice preference 1-2 tbsp) and also add the freshly ground biryani masala powder(from 1️⃣)and mix it once.
5️⃣Immediately after adding the masalas add sliced tomatoes and cook until the tomatoes are soft.
6️⃣Add the 1/2 cup of yogurt / curd and mix it well.
7️⃣Add the chicken pieces,add 1 cup of water, add salt and cook for medium heat or until the chicken is cooked perfectly.
8️⃣Add a handful of mint and coriander leaves.Add 2 cups of water (the ratio of rice:water for biryani is 2:3,since we have already added 1 cup of water while cooking the chicken it is enough to add 2 cups of water
9️⃣Add the soaked rice and mix it well.Cover and cook until done.
