One Person Quinoa Bowl
One person Quinoa bowl
Ingredients
1/4 cup quinoa
150g chicken
80g sweet potato
handful of mushrooms
white onion
tomato
garlic paste
garam masala
salt to taste
cajun seasoning
chicken stock cube
Method
Start off by adding 1/4 cup quinoa, 1/2 cup water and 1/2 chicken stock cube in a saucepan. Wait for it to bowl then close and let it cook on low heat for 20mins.
Cut the sweet potato into tiny cubes. Place this is bowl, and add 1tsp of cajun seasoning, 1tsp garlic granules/ 1tsp garlic paste, and olive oil so that it coats all the cubes. Add this to a pan on medium heat, meanwhile start making the chicken. It should be done in approximately 15mins
In a frying pan, add olive oil and half of a white onion, and wait for it to brown. Add tomato, mushroom and diced chicken breast. Now season it with 1tsp garlic granules/ paste, 1tsp garam masala, chilli(opt), salt to taste.
Take the quinoa off the heat and allow to cool, then separate with a fork. Add this to a bowl with the sweet potato, and the chicken fry mixture.
