Winter Melon Candy:(Puhul Dosi with brown sugar)
Candied winter Melon is a translucent,Soft Candy.In Sri Lanka it’s called Puhul Dosi and it is made out of Ash Gourd.(Ash Pumpkin)
This Candy can be eaten on it’s own,or added to Ice Cream,rich Cakes like Christmas Cake,Bibikkan,Rich Fruit cakes,Love Cake.you can make Puhul dosi at home and store it for one year in the refrigerator.If you don’t have to access to Sri Lankan puhul dosi if you are living in abroad,this recipe is very useful for you.If you make this with white sugar it will be like the original puhul Dosi which is available in the store,I have made a healthy version 😜I’m sharing the recipe with you all.Try it out and let me know the Feedback.
Ingredients:
🌹Winter Melon(puhul)700g
🌹Sugar 600g (I used Brown Sugar)
🌹1 Teaspoon Baking Soda or Slaked lime
🌹Water
Method:
1.peel the winter Melon and cut into cubes as shown.
2.wash it 3-4 times nicely.
3.Prick all the sides with a fork,Soak it for 5-6 hours in a basin of water with Baking Soda or slaked limes.
4.Wash it again 4 times until all the baking Soda goes.
5.Add 10 cups of water to a deep pan,when it boils,add the winter Melon cubes.
6.Boil it for 15 - 17 minutes in medium heat i a opened pan.
7.Strain the water.
8.Add them to a pan while hot and add 500g sugar,first mix it well then switch on the fire.
9.Cook on Medium heat for 7 minutes.
10.Cook Until it turnslucent ,when it is cooked add half a cup of water to it. Cook on medium heat now.cook for 5 more minutes and switch off the fire.
11.when it is cool close with a lid and leave for 5 hours in the pan or leave it overnight.
12.Now remove the pieces out and leave it aside.
13.Add the remaining 100g sugar to the left over syrup and boil it until thickens.
14.when it is thick add the pieces to it mix it well.cook for 7 more minutes,
Until the sugar become thick and granules switch off the fire.
16.when it’s cool store in an airtight container.
