Vanilla Pudding with Raspberries

Vanilla raspberry pudding (serves 4)
Ingredients:
500ml whole milk
80g caster sugar
3 large egg yolks
3 tablespoon (25 grams) cornflour
15 grams unsalted butter
1/2 teaspoon salt
3 teaspoon vanilla extract
30-40 raspberries to serve

Method
Place sugar ,corn flour,egg yolks and salt in a large bowl.
Pour In Half milk and whisk until well combined and smooth.
Hear the remaining milk in a saucepan over medium low heat until steaming .
Pour half of the hot milk mixture into yolk mixture in a steady stream ,whisking constantly to combine.
Then pour the yolk and milk mixture back into pan and mix well .
On medium flame,place the bowl back and bring to a boil stirring constantly .
Reduce heat and simmer for further one minute stirring till mixture has thickened .
Remove and strain through fine sieve into large bowl .
Whisk in the butter and vanilla extract until evenly combined .
Cover with cling film making sure it touches top of the pudding .
Chill for Atleast 3-4 hours.
Serve with raspberries ontop
