Cake Rusks:










 Cake Rusk is a popular Indian style biscotti or rusk made using vanilla sponge cake. This is a delicious bakery-style crisp, firm, golden cake rusk recipe. This simple homemade cookie with subtle flavor goes perfectly with a glass of milk, coffee, or tea.

Ingredients:

225g Butter 

300g All Purpose Flour 

340g Sugar 

11/2 teaspoons Baking Powder 

4 Eggs

Pinch of Orange Food Color 

1 teaspoon Vanilla 


Method 

1️⃣Preheat oven to 175c•

2️⃣Mix flour, baking powder and food color with a whisk.

3️⃣Mix eggs,  butter, vanilla essence and sugar until smooth mixture with a hand mixer .

4️⃣Fold the dry ingredients mixture slowly into the liquid mixture. Do not over mix.

5️⃣Grease a pan with butter.

6️⃣Pour the cake mixture into the pan.

7️⃣Bake in the oven for about 30mins ( Keep checking after 25mins because the timing will vary with every oven).

8️⃣Use a fork/tooth pick to check if the cake is baked fully.

9️⃣Keep the cake aside so it comes to room temperature.

1️⃣0️⃣Cut the cake into 1 inch slices and place it in a row on a foil covered baking pan.

1️⃣1️⃣Bake again at 175c•for 15mins.

After 15mins, flip the pieces so the bottom surface faces up.

Bake for another 15mins.It will turn golden brown.

1️⃣2️⃣Remove from oven and cool till room temperature.

1️⃣3️⃣It will be crispy and golden brown and perfect.
