Sri Lankan Devilled Chicken With Vegetables:( my version)

Ingredients for the Vegetable sauce:

🌷1 onion sliced or cut into rings

🌷1-2 Carrots

🌷100 g Mushrooms

🌷1-2 Green Chillies

🌷3-4 Asparagus Spears

🌷2 tablespoons Tomato sauce

🌷1 tablespoon Chillie sauce

🌷1 tablespoon Dark soya sauce

🌷1 teaspoon Sugar

🌷Salt to taste

🌷1 teaspoon chillie powder

🌷1 teaspoon chili pieces (optional)

🌷2 teaspoon-ginger and garlic paste

🌷1 soup cube

🌷3 teaspoons Cornflour 


Ingredients for the Chicken Marinade;


🌷1 kg Chicken 

🌷3 teaspoon Chillie powder

🌷1/4 teaspoon Turmeric powder

🌷Salt to taste

🌷2 tablespoons lemon juice

🌷4 tablespoons curd

🌷1 teaspoon Garam Masala Powder 

🌷1 teaspoon Pepper powder 

🌷1/2 teaspoons Cumin Powder 


Method:

🌹Marinate the Chicken with all the ingredients and keep it aside for 1 hour then deep fry it.

I used the air-fryer at 200c  for 25 minutes.


How to make the vegetable Sauce:


1️⃣Put the soup cube into a bowl and add 2 cups of water mix well.add soya sauce ,tomato sauce,chillie sauce, sugar, corn flour,chillie powder and keep it aside.


2️⃣Now keep a pan on fire add oil,add ginger garlic paste ,when it’s brown add the onions,vegetables and the salt stir it for a minute.add the Chili pieces stir fry for 2-3 minutes.

3️⃣Pour the sauce mix to it and add the fried Chicken pieces.

5️⃣When it comes to a boil and becomes thick switch off the fire.

6️⃣You can enjoy it with Fried rice or noodles.


Sweet corn Fried Rice:

Ingredients:

🌷3 Cups Cooked Rice

🌷1/2 Cup Green Peas Frozen or Fresh

🌷1 cup Sweet corn (Can,Frozen Or Fresh)

🌷2 teaspoons Ginger and Garlic Paste

🌷1 Carrot Grated

🌷1/4 teaspoons Turmeric powder 

🌷Salt

🌷1 teaspoon Pepper powder or Chili pieces


Method:


1️⃣Heat oil,add ginger & garlic paste,sautΓ© for few seconds. To this add Green peas,Carrot and sweet corn and sautΓ© for few minutes on high flame with constant stirring. (for about 4- 5 minutes ). 

2️⃣Reduce the flame and Add salt,Turmeric Powder to it and mix well. SautΓ© for another one minute.

3️⃣Add the cooked rice to it and mix well.Sprinkle pepper powder to it and mix well. Heat it covered for about 8- 10 minutes on low flame. Serve hot.
