Sri Lankan Devilled Chicken With Vegetables:( my version)

Ingredients for the Vegetable sauce:

๐ŸŒท1 onion sliced or cut into rings

๐ŸŒท1-2 Carrots

๐ŸŒท100 g Mushrooms

๐ŸŒท1-2 Green Chillies

๐ŸŒท3-4 Asparagus Spears

๐ŸŒท2 tablespoons Tomato sauce

๐ŸŒท1 tablespoon Chillie sauce

๐ŸŒท1 tablespoon Dark soya sauce

๐ŸŒท1 teaspoon Sugar

๐ŸŒทSalt to taste

๐ŸŒท1 teaspoon chillie powder

๐ŸŒท1 teaspoon chili pieces (optional)

๐ŸŒท2 teaspoon-ginger and garlic paste

๐ŸŒท1 soup cube

๐ŸŒท3 teaspoons Cornflour 


Ingredients for the Chicken Marinade;


๐ŸŒท1 kg Chicken 

๐ŸŒท3 teaspoon Chillie powder

๐ŸŒท1/4 teaspoon Turmeric powder

๐ŸŒทSalt to taste

๐ŸŒท2 tablespoons lemon juice

๐ŸŒท4 tablespoons curd

๐ŸŒท1 teaspoon Garam Masala Powder 

๐ŸŒท1 teaspoon Pepper powder 

๐ŸŒท1/2 teaspoons Cumin Powder 


Method:

๐ŸŒนMarinate the Chicken with all the ingredients and keep it aside for 1 hour then deep fry it.

I used the air-fryer at 200c  for 25 minutes.


How to make the vegetable Sauce:


1️⃣Put the soup cube into a bowl and add 2 cups of water mix well.add soya sauce ,tomato sauce,chillie sauce, sugar, corn flour,chillie powder and keep it aside.


2️⃣Now keep a pan on fire add oil,add ginger garlic paste ,when it’s brown add the onions,vegetables and the salt stir it for a minute.add the Chili pieces stir fry for 2-3 minutes.

3️⃣Pour the sauce mix to it and add the fried Chicken pieces.

5️⃣When it comes to a boil and becomes thick switch off the fire.

6️⃣You can enjoy it with Fried rice or noodles.


Sweet corn Fried Rice:

Ingredients:

๐ŸŒท3 Cups Cooked Rice

๐ŸŒท1/2 Cup Green Peas Frozen or Fresh

๐ŸŒท1 cup Sweet corn (Can,Frozen Or Fresh)

๐ŸŒท2 teaspoons Ginger and Garlic Paste

๐ŸŒท1 Carrot Grated

๐ŸŒท1/4 teaspoons Turmeric powder 

๐ŸŒทSalt

๐ŸŒท1 teaspoon Pepper powder or Chili pieces


Method:


1️⃣Heat oil,add ginger & garlic paste,sautรฉ for few seconds. To this add Green peas,Carrot and sweet corn and sautรฉ for few minutes on high flame with constant stirring. (for about 4- 5 minutes ). 

2️⃣Reduce the flame and Add salt,Turmeric Powder to it and mix well. Sautรฉ for another one minute.

3️⃣Add the cooked rice to it and mix well.Sprinkle pepper powder to it and mix well. Heat it covered for about 8- 10 minutes on low flame. Serve hot.
