crab and corn soup (serves20)

ingredients
1 large fresh crab
2 1/2 litre chicken stock
2 eggs
salt
100g corn crenels
1 tsp cornflour
2 tsp water
4 springonions

methods
cook crab in seasoned water for 8 minute.cool and remove flesh and flake.
put oil into a panand ginger and garlic,boil the stock.
switch off and add the beaten eggs and keep beating.mix cornflour and
water into a thick paste ,add this and keep on stirring.
boil it slightly.add a crab meat,salt,corn crenels,sprinkle chopped spring onions ontop.
