Mutton Paya or Aatukal Paya is an exotic Soup from the Chettinadu cuisine made with goat legs.

Ingredients:

  • ๐ŸŒท500g Goat Trotters

    ๐ŸŒท1/2 teaspoons Turmeric powder 

    ๐ŸŒท1 tablespoon Ginger Garlic Paste .

    ๐ŸŒทCurry Leaves 1 spring.

    ๐ŸŒท1  Onions (Chopped) 

    ๐ŸŒท Bayleaf 

    ๐ŸŒท2-3 Cardamoms

    ๐ŸŒทCinnamon stick

    ๐ŸŒท 1 tea spoon Cumin Seeds

    ๐ŸŒท1 tablespoon Oil 

    ๐ŸŒท2-3 green chilies

    ๐ŸŒทcoconut milk 1/2 cup ( 1 tablespoon of powder)or 4 tablespoons Curd 

    ๐ŸŒท1 tablespoon Coriander powder 

    ๐ŸŒท1 tablespoon Garam Masala Powder 

    ๐ŸŒท2-3 teaspoons Chili powder (add according to your spice level)

    ๐ŸŒท1 teaspoon Pepper Powder 

    ๐ŸŒทCoriander leaves for Garnish 

    ๐ŸŒทone Lemon Juice 

    ๐ŸŒทginger cut into julienne for Garnish 

    ๐ŸŒท1-2 Cloves ( optional)

    ๐ŸŒท6-7 Cups of water.

    ๐ŸŒท1 teaspoon Kastoori methi(optional)



    Method:

    1.Clean Mutton Tortes with little turmeric and water and keep it aside.

    2.Take Pressure Cooker add oil to it then add cardamom, cloves, cinnamon,  bay leaf, onions chopped Cook it until it turns translucent.then add curry leaves, ginger garlic paste, Mix well.

    3.In a bowl add the remaining ingredients to the  Mutton trotters.mix it well and add 3 or more cups water as required to cook the meat.close the pressure cooker with the lid, let it cook for at least 30 minutes in slow flame.

    4.Once the Mutton Tortes are cooked ,Add the remaining water.If you want more soup,you can add some more water.Cook for another 10-15 Minutes.

    5.When it is done add lemon Juice,Coriander leaves ,kastoori methi and mix well.

    6. Mutton Paaya Soup is ready.
