Semolina Kesari:


SEMOLINA/RAVA/SOOJI KESARI:




Ingredients:
๐ŸŒน1 cup Sooji / Rava / Semolina
๐ŸŒน1 cup Sugar
๐ŸŒน4 -5 tablespoons  Ghee or Butter 
๐ŸŒนCashew nuts 
๐ŸŒน Raisins
๐ŸŒนpinch of Orange food color or Kesari Powder 
๐ŸŒน2 cups Milk (If you want use Water)

Method 

1️⃣Add little Ghee in a pan and roast cashews first,once it turn golden add the raisins and roast until they are ballooned, do not burn them (they will taste bitter if burnt).
Transfer this to a plate.

2️⃣Add the Semolina to a pan and roast it nicely until you get a nice aroma and golden color.It will take around 8-10 minutes.when it obtains golden color remove the pan from Fire.

3️⃣Add the Milk to a pan.

4️⃣Add the Orange color,Sugar and  Roasted Semolina,Mix well.Switch onthe Fire.keep on stirring to prevent lumps once you get a lump free mixture cook until all the water is absorbed by the rawa

5️⃣ Once all the water absorbed by the Semolina Add the ghee or butter and the Fried Raisins and Cashews nuts.Mix well.

6️⃣ Pour it onto a butted tray and leave to cool and cut into squares or diamond shape.Or you can serve in small cups.
