Mutton Biriyani














 MUTTON BIRIYANI

Ingredients for the Mutton Masala:

๐ŸŒบ1 kg Mutton

๐ŸŒบ500 g Onions sliced 

๐ŸŒบ2 Tablespoons ginger and garlic paste 

๐ŸŒบ2-3 green chili chopped 

๐ŸŒบ2 tablespoons coriander powder 

๐ŸŒบ1 teaspoon Cumin powder 

๐ŸŒบ1 teaspoon Turmeric 

๐ŸŒบ1-2 teaspoons Chili powder 

๐ŸŒบ2 teaspoons Garam Masala Powder 

๐ŸŒบ1 cup curd  

๐ŸŒบ3 medium Tomatoes  chopped

๐ŸŒบ2 tablespoons lemon juice

๐ŸŒบOil or ghee for cooking

๐ŸŒบ4-5 Potatoes peeled and cut

๐ŸŒบDried Coriander leaves or fresh

๐ŸŒบ4-5 Cardamom pods

๐ŸŒบCinnamon stick

๐ŸŒบ1-2 Cloves 

๐ŸŒบSalt to taste


To cook the rice:

๐Ÿš๐Ÿš๐Ÿš๐Ÿš๐Ÿš

๐ŸŒบ3 cups Basmati Rice 

๐ŸŒบ3 tablespoons Salt

๐ŸŒบ1 teaspoon Cumin seeds

๐ŸŒบ2 Bay leaf

๐ŸŒบ2 tablespoons of Ghee

๐ŸŒบ2 pieces Cinnamon stick

๐ŸŒบ4 Cardamom pods

๐ŸŒบPinch of Red food coloring (optional)

Method:

๐ŸšMeantime add  3 cups basmati rice to a large bowl.and rinse it at least thrice. Drain and soak in fresh water for 30 minutes.

๐ŸšAdd 12 cups of water to a deep pan followed by the bay leaf,cumin seeds,cinnamon stick.Make sure to add more salt,Stir it well to dissolve the salt.it should taste like sea water.then only the biriyani will taste good.cook in very high heat.


๐ŸšOnce  the water starts boiling add the strained basmati rice,stir it well and continue to boil it On high heat,Stirring few times very gently not to break the rice,Boil for 8-10 minutes until the rice is  75%done.

๐Ÿš You can either press the rice grains between the forefinger and thumb. While pressing the rice grains should break into half.

๐ŸšSwitch Off the fire and strain out all the water.

๐Ÿšset it aside.


How to cook the Mutton:

1️⃣Clean and wash the mutton,add it to a bowl

2️⃣Add to the meat Salt,ginger and garlic paste,Chili powder,curd,turmeric powder Coriander powder,Cumin powder,lemon juice,Mix it well and keep it aside.

3️⃣Heat the oil or Ghee in the pressure cooker or pan.Use a large heavy bottom pot to make the Biriyani.

When the ghee is hot add the onions

fry them stirring often until uniformly light brown On a medium heat.

4️⃣Add the whole spices followed by the chopped tomatoes.

5️⃣Add the Marinated Mutton.add 2 cups water or more to cover the mutton completely.close with the lid and cook until the meat is tender.

6️⃣If you are cooking in the regular pan cook for 30- 40 minutes on low heat until the meat is tender.it will take slightly longer,but the result also will be more tastier.

7️⃣Meantime soak the rice.

8️⃣Add the potatoes to the cooked meat and cook for 5 minutes.dry up any excess water to get a thick gravy.


Layering the rice and the cooked Mutton:


1️⃣Add the half cooked and strained rice on top of the mutton curry,spread it uniformly,sprinkle some fried onions,coriander leaves,Food colour powder on top Of the rice.close with a tight lid.

2️⃣Cook in very low heat.

3️⃣For 15 minutes or until the water is dry.this tends to infuse all the lovely biriyani flavor into the rice as it steams.

4️⃣Mix  the rice and Mutton evenly.

๐ŸŒบ๐ŸŒบServe with Raita or Onion salad If you want boil some egg.

๐ŸŒบI didn’t add Coriander leaves,I used 

dried coriander leaves.

๐ŸŒบI served with cucumber salad and Maldive fish sambol.
