Mutton Paya With Veggies:

(My Version)

The goat trotters which I got was cleaned trotters but not burned . So I roasted the skin over fire to burn off any loose hair and to get the smoky look and flavor.



Ingredients:

🌷500g Goat Trotters

🌷1/2 teaspoons Turmeric powder 

🌷1 tablespoon Ginger Garlic Paste .

🌷Curry Leaves 1 spring.

🌷1  Onions (Chopped) 

🌷 Bayleaf 

🌷2-3 Cardamoms

🌷Cinnamon stick

🌷 1 tea spoon Cumin Seeds

🌷1 tablespoon Oil 

🌷2-3 green chilies

🌷coconut milk 1/2 cup ( 1 tablespoon of powder)or 4 tablespoons Curd 

🌷1 tablespoon Coriander powder 

🌷1 tablespoon Garam Masala Powder 

🌷2-3 teaspoons Chili powder (add according to your spice level)

🌷1 teaspoon Pepper Powder (optional)

🌷Coriander leaves for Garnish 

🌷Lemon Juice 

🌷1-2 Cloves ( optional)

🌷6-7 Cups of water.

🌷1 teaspoon Kastoori methi(optional)

🌷2 carrots

🌷some Cabbage

🌷Raddish 

🌷2-3 Potatoes 

(Add any vegetables you like)


Method:

1️⃣Clean the Mutton Trotters.wash well and keep it aside.

2️⃣Add Oil to the Pressure Cooker,when the oil is hot add ginger and garlic paste.cardamom, cloves, cinnamon,  bay leaf.

3️⃣Add the Rampe and the curry leaves.

4️⃣Add the chopped Onions and Green Chillies Cook it until it until translucent.

5️⃣In a bowl add the remaining ingredients to the  Mutton trotters marinate well.

6️⃣Add the marinated mutton tortures to the pressure cooker.

mix it well and add 3 or more cups water as required to cook the meat.close the pressure cooker with the lid, let it cook for at least 10-15 minutes on low flame.

7️⃣Once the Mutton Tortes are cooked ,Add the vegetables and more water to cook the vegetables.If you want more soup,you can add some more water.Cook for another 3-4 whistles.

8️⃣Mutton Paaya Soup is ready.


🌺If you want you can slow cook in the stove top for 49-50 minutes until the meat is tender.then add the vegetables and cook for further 10-15 minutes until done.


How to clean the Mutton Trotters;


🌷Cleaning is extremely tough, they smoke the trotters or roast them over open fire to burn off the hair from the feet and hoof


1️⃣First thoroughly rinse in clear running water. Now you need to remove any hair that the butcher left on them.
2️⃣You can do this by burning them off with a flame from a gas .(Note: Be patience and do it carefully so as not to scorch the skin – both yours and the trotter’s😃)
3️⃣Make sure to check the trotters burnt properly and hair is removed completely; if there are any remains of burnt hair then scrap the burnt hair using a knife.

4️⃣Then give them a soak in lime juice or vinegar for 10-15 minutes. (Or) scrub well the trotters with a mixture of flour and salt for 10 minutes and left to soak in the mixture for 5 mins to draw out dirt and toxins.

5️⃣Once the trotters are cleaned; rinse them for 3-4 times in running water.Make sure all of the flour and salt have washed thoroughly.
