Chicken Kurma(My Version)
Chicken Kurma:
Ingredients
For the Chicken:
๐ 1 kg Chicken (cut into pieces)
๐3 tablespoons Oil
๐1 Cinnamon stick
๐2 tablespoons Ginger garlic paste
๐3-4 Cardamom pods
๐1 tablespoon Salt
๐½ cup Yoghurt or Curd
๐1 tablespoon Pepper Powder
๐2 tablespoons Coriander Powder
๐1 tablespoon Cumin Powder
๐1 teaspoon Garam Masala
๐¼ teaspoon Turmeric Powder (optional)
๐1 Onion, chopped
๐5-6 Green chilies
๐Pandan Leaves (optional)
๐Curry Leaves
For the Paste:
๐A handful of Cashew nuts
๐½ cup Yoghurt or Curd
๐1 cup Fried onions
Method:
1️⃣Heat oil in a large pan or wok. Add the pandan Leaves,ginger and garlic paste.saute it for 2-3 seconds add the Cut Chicken pieces.Mix well.
2️⃣Add the chopped onions, green chilies, and curry leaves. Stir to combine, then add the coriander powder, cumin powder, garam masala, Turmeric powder yoghurt (or curd), and salt. Mix everything thoroughly to coat the chicken with the spices.
3️⃣ Adding cardamom pods and cinnamon stick later in the cooking process is a great way to preserve their aroma and flavor.
4️⃣In a blender, combine the cashew nuts, fried onions, and yoghurt (or curd) to make a smooth paste.
5️⃣Add the cashew paste to the chicken and stir until evenly distributed.
6️⃣Cover the pan and cook on medium heat for about 15-20 minutes, stirring occasionally, until the chicken is fully cooked and the flavors are well combined.
7️⃣Garnish with additional curry leaves if desired, and serve hot with steamed rice or flatbreads.
