Fish Mandi or Fish Kabsa

Special  Arabian Masala Powder;
Ingredients:
Chili powder 50 g
Pepper powder 50 g
Cumin powder 50 g
Coriander powder 50 g
Turmeric powder 4 teaspoons 

Method;
1.Mix all this powders.
2.roast this below Ingredients and grind them.
3.Add the grounded powder to the above spices and mix well.

Fennel seeds 50 g
Frenugueek seeds 2 teaspoons 
cardamom 20 g
Cinnamon 20g
Cloves 5 pieces
🌹🌹store it in an airtight jar and use when needed
🌹🌹If you make this Masala and keep in advance you can cook this Mandi rice very quickly.
🌹🌹I Use this same masala for chicken Mandi .i will show you  in future how to make my Chicken Mandi Rice πŸ˜€πŸ˜€.


For the rice :
600h Basmati rice
1 big onion
1 soup cube
5 cardamoms
Bay leaf
Cinnamon sticks
2 teaspoons Salt  
3 teaspoons Tomato paste
3 teaspoons Ginger and garlic paste
25g Raisins 
50 g cashew nuts 
2 Cloves
2 teaspoons Special Arabian Masala powder 
1 carrot grated

Method:
1.Add oil to a  pan.
2.Fry the plums and Cashew nuts.keep it aside.
3.fry the onions until brown.
4.Add the Cinnamon ,Cardamom,Bay leaf,cloves stir it .
5.Add the ginger and garlic paste,stir it.
6.Add the Arabian Masala ,Tomato paste,mix well.
7.Add the soup cube,Salt,Add water ,mix well.
8.close with the lid and simmer for 5 minutes.
9.Now add the rice and add enough water to cook the rice in the gravy along with the half cashew nuts and Raisins.
10.when it is done sprinkle the grated carrot and the remaining cashew nuts and plums.

Fish Mandi Marinate :
Ingredients:
 1 kg Fish Fillet or any fish slice
2 tablespoons chili powder
1/2 teaspoons turmeric powder 
1 teaspoon salt
1 teaspoon pepper powder 
2 teaspoons chilly powder 
2 teaspoons cumin powder 
2-3 teaspoons special  Arabian Masala
Juice if 1 Lemon

Method:
1.Add all the ingredients into a bowl mix well.leave it aside to marinate for one hour.
2.Pour oil to a pan(shallow fry),when the oil is hot add the fish pieces .
  1. pan fry both sides of the fish until done.
  2. Arrange it on top of the rice.
  3. Serve with Raita and jam.
  4. I made some gravy with little chicken.( follow the same rice cooking method but instead of rice I added some chicken and added like 6 cups of water and made the Mandi gravy to eat with the rice.They serve this rice in restaurant with this gravy.)
