Kalu Dodol With Left Over Rice:





Ingredients ;
🌹Coconut milk 2 1/2 cups
🌹Left over  rice 2 cups( I made with basmati rice)
🌹Jaggery 250g (add more if you want )or add sugar  
🌹Caramelized sugar 5-6 tablespoons 
🌹Coconut oil 6 tablespoons 
🌹Cardamom powder 1 teaspoon 

Method;
1.Grind the rice With the coconut milk . Add  1 1/2 cups coconut milk first then add the remaining and grind well.                                    
2.   Boil the Jaggery with  water (1 cup) . and cook in low flame 🔥 
3. Add the caramelized sugar and mix well.boil it well until the jaggery dissolves.
 4.  Cool the  Jaggery mix . 
5. Add the grounded rice to the jaggery mixture. (Cook on medium flame ) 🔥
6. Mix it well  , don’t stop mixing 🥣
7. After 12 minutes add the cardamom powder . Now add the  1Tbsp coconut oil  mix well.
8. After 17 minutes add 1 tablespoons coconut oil.
9. Add another 2 Tbsp. Coconut oil after 23 minutes .
10. Now after 35 minutes ,add the chopped cashews nuts,add 2 tablespoons of coconut oil and mix well ,switch off the fire.
11.  Pour it on to a oiled tray now flatten it nicely and press cashews nuts on top and let it cool.
12. When it’s very cold cut it.   
13. Enjoy 😉
