Pineapple and Tomato Jam:

Ingredients:
๐ŸŒน1 kg Pineapple 
๐ŸŒน2 Kg Tomatoes 
๐ŸŒน750g- 1kg Sugar
๐ŸŒน2” Cinnamon Stick
๐ŸŒน1/2 teaspoon Cardamom Powder 
๐ŸŒนPinch of Salt
๐ŸŒนRed Food Coloring
๐ŸŒนRaisins (Optional)
๐ŸŒนCashew Nuts(optional)
๐ŸŒน1 teaspoon vanilla Essence 

Method:
1.Add water to a Pan with the Tomatoes.Let it Boil.Then Switch off the fire.
2.Close it with the lid.Switch off the fire and leave it aside for 10 minutes.
3.Peel the Tomatoes Skin.
4. Cut the pineapple into Cubes.
5.Blend the Pineapple Cubes.
6.Mash the Tomatoes,add it to a deep pan.
7.Add the blended Pineapple,Mix well.
8.Add the Cinnamon Stick and Cardamom Powder.
9.Add the red Coloring.
10.Cook on low flame for 20 minutes.
11.Add 750g- 1 Kg Sugar,Mix well.
12.Add the Raisins and Cashew nuts.
13.Cook for another 15 more minutes.
14.Add the Vanilla Essence and Mix well.
15.Add a pinch of Salt.stir it. 
16.When it is thick,Switch Off the Fire.
17.Store it for up to 6 Months in the refrigerator.

Biriyani,Yellow Rice,Ghee Rice,Any Pilau,Any Kabsa.
