Sri Lankan Brinjal Stir Fry (My version):


Ingredients:

🌷500 grams Brinjals

🌷1/2 tomato chopped

🌷1 onion chopped 

🌷2-3 Green chilli chopped 

🌷Curry leaves 

🌷Rampa 

 🌷1/4 teaspoons Turmeric powder 

🌷1 teaspoon Chili powder

🌷1 teaspoon coriander powder

🌷1/2 teaspoons cumin powder 

 🌷1 cup thick coconut milk 

 🌷1/2 teaspoons Mustard Seeds

🌷1/2 teaspoons Cumin Seeds

🌷1” Cinnamon Stick

🌷Salt 

Oil for frying 


Method 

1️⃣Cut the  Brinjal’s into medium size  strips.Mix it with turmeric powder and salt. Deep fry the Brinjal  pieces in batches until golden brown. Transfer it to paper towels.

2️⃣In another pan heat some oil add Mustard seeds,when it splatter add Cinnamon sticks,chopped onions, curry leaves and rampe.add all the spices and salt. Add tomatoes and sauté till they are 50 percent cooked. 

3️⃣Add little water to cook the onions.

4️⃣When all the water dries up add the thick coconut milk to make a gravy.

5️⃣when the gravy starts boiling add the fried Brinjals and put the fire on low flame. Keep for few minutes. When all the gravy dries up switch off the fire.or you can leave little gravy and switch off the fire.
