CHICKEN MAJBOOS or MANDI (my version)
My version of Chicken MAJBOOS or MANDI

Special Arabian Masala Powder;
Ingredients:
Chili powder 50 g
Pepper powder 50 g
Cumin powder 50 g
Coriander powder 50 g
Turmeric powder 4 teaspoons
Method;
1.Mix all this powders.
2.roast this below Ingredients and grind them.
3.Add the grounded powder to the above spices and mix well.
- Fennel seeds 50 g
Frenugueek seeds 2 teaspoons
cardamom 20 g
Cinnamon 20g
Cloves 5 pieces
🌹🌹store it in an airtight jar and use when needed
🌹🌹If you make this Masala and keep in advance you can cook this Mandi rice very quickly.
🌹🌹I Use this same masala for Fish Mandi also.
🌹🌹You can make this masala Ahead and store it.
❤️If you can’t make this Arabian Masala you can use pilau Masala or any biriyani Masala which is available at home.but this Arabian Masala gives a very good taste and aroma.

For the rice :
1 kg Chicken
600g Basmati rice
1 big onion
1 soup cube
5 cardamoms
Bay leaf
Cinnamon sticks
2 teaspoons Salt
3 teaspoons Tomato paste
3 teaspoons Ginger and garlic paste
25g Raisins
50 g cashew nuts
2 Cloves
2 teaspoons Special Arabian Masala powder
2 teaspoons Oil
Method:
1.Add oil to a pan.
2.Fry the plums and Cashew nuts.keep it aside.
3.fry the onions until brown.
4.Add the Cinnamon ,Cardamom,Bay leaf,cloves stir it .
5.Add the ginger and garlic paste,stir it.
6.Add the Arabian Masala ,Tomato paste,mix well.
7.Add the soup cube,Salt,Add water ,mix well.
8.Add the Chicken close with the lid and simmer for 5 minutes.Cook the chicken until half done.
9.Now slowly remove the Chicken from the gravy.
10.Marinate the Chicken and bake it as shown in the recipe.
11. add the rice and add enough water to cook the rice in the gravy along with the half raisins and half Cashew-nuts.
12.when it is done sprinkle the remaining cashew nuts and plums.
How to Marinate the half cooked Chicken:
2 tablespoons chili powder
1/2 teaspoons turmeric powder
1 teaspoon salt
1 teaspoon pepper powder
2 teaspoons chilly powder
2 teaspoons cumin powder
2 tablespoons tomato sauce or ketchup
Juice if 1 Lemon
2 teaspoons Olive Oil
2 teaspoons Olive Oil
2-3 potatoes peeled and cut into thin halves
Method:
1.Add all the ingredients into a bowl mix well.
2.Now add the half cooked Chicken pieces and Potatoes Mix well to coat all the masala.
3.Arrange the chicken on a tray .put an Aluminum foil under the chicken so,it’s easy to clean afterwards.
3.Bake at 240c for 10- 15 minutes,turn both sides ,bake until brown on top
4.serve it on top of the rice or serve separately as I have done in the picture.
5.Serve with Onion Kachumbari and any Jam of your Choice .
