My Special Mutton Biriyani

Ingredients for the Mutton Masala:
πΊ1 kg Mutton
πΊ500 g Onions sliced and fried or add 2-3 cups fried onions
πΊ2 Tablespoons ginger and garlic paste
πΊ1-2 green chili chopped
πΊ2 tablespoons coriander powder
πΊ1 teaspoon Cumin powder
πΊ1 teaspoon Turmeric
πΊ1-2 teaspoons Chili powder
πΊ1 cup curd Or plain yoghurt
πΊ4 tablespoons Tomato paste
πΊ2 medium Tomatoes blended with one cup water.
πΊ2 tablespoons lemon juice
πΊOil or ghee for cooking
πΊ4-5 Potatoes peeled, halved and fried
πΊCoriander leaves chopped (optional)
πΊ4-5 Cardamom pods
πΊCinnamon stick
πΊ1-2 Cloves
πΊSalt to taste
To cook the rice:

πΊ3 cups Basmati Rice
πΊ3 tablespoons Salt
πΊ1 teaspoon Cumin seeds
πΊ1 Bay leaf
πΊ1 tablespoons of oil
πΊ2 pieces Cinnamon stick
πΊ4 Cardamom pods
πΊFew drops of Orange food coloring
πΊA drop of Red food coloring (optional)
πwash the rice 3 times and soak it for half an hour.
πAdd 12 cups of water to a deep pan followed by the bay leaf,cumin seeds,cinnamon stick.Make sure to add more salt,Stir it well to dissolve the salt.it should taste like sea water.then only the biriyani will taste good.cook in very high heat.
πOnce the water starts boiling add the strained basmati rice,stir it well and continue to boil it On high heat,Stirring few times very gently not to break the rice,Boil for 8-10 minutes until the rice is 90% done.
πSwitch Off the fire and strain out all the water.
πset it aside.
How to cook the Mutton:
1.Clean and wash the mutton,add it to a bowl
2.Add to the meat Salt,ginger and garlic paste,Chili powder,half the fried onion,curd,turmeric powder Coriander powder,Cumin powder,lemon juice,Mix it well and keep it aside.
3.Heat the oil or Ghee in the pressure cooker or pan.
4.Addd the whole spices followed by the tomatoes (ground),Remaining half of the fried onions and the tomato paste.
5.Cook it for one whistle or for 5 minutes and switch off the fire.
6.Add the Marinated Mutton to the tomato mix,add 2 cups water or more to cover the mutton completely.close with the lid and cook until the meat is tender.
7.If you are cooking in the regular pan cook for 30- 40 minutes on low heat until the meat is tender.it will take slightly longer,but the result also will be more tastier.
8.Add salt and little turmeric powder to the potatoes and deep fry it.
9.Add the potatoes to the cooked meat.dry up any excess water to get a thick gravy.
Layering the rice and the cooked Mutton:
1.Add the half cooked and strained rice on top of the mutton curry,spread it uniformly,sprinkle some fried onions,coriander leaves,coloring on top Of the rice.close with a tight lid.
2.Cook in very low heat.
3.For 15 minutes or until the water is dry.this tends to infuse all the lovely biriyani flavor into the rice as it steams.
4.Mix the rice and Mutton evenly.
πΊπΊServe with Raita (or salad),Jam,chicken fry(optional)if you want you can boil some egg.
