Fish Kabsa:
Ingredients for Marinating the Fish
πΊ1/2 teaspoons Turmeric powder
πΊ2 teaspoons Chilly powder
πΊ1 teaspoon Pepper powder
πΊ2-3 teaspoons Ginger garlic paste
πΊ1 tablespoon Lemon juice
πΊSalt-to taste
πΊOil-for shallow frying

πΊ2 Cups Basmati rice
πΊ500g Fish Fillet or any Fish
πΊ1” Cinnamon Stick
πΊ1-2 Clove
πΊ2-3 Cardamom pods
πΊ2 Bay leaf
πΊ1/2 teaspoons cumin seeds
πΊ1 Big Onion
πΊ1 Large Tomato
πΊ250 ml Tomato puree
πΊ2 tablespoons Ginger garlic Paste
πΊ2 teaspoons Garam Masala Powder
πΊ1-2 Green chilli
πΊ 1 teaspoon Pepper powder
πΊ1 teaspoon Cumin powder
πΊ1 Dried lemon
πΊ1 Fish stock cubePeeled almonds-to garnish( optional)
Preparation:
- 1️⃣Wash and soak basmati rice in water for 30 minutes.
- 2️⃣Drain it and keep aside.
- 3️⃣Clean the fish and marinate it with marinating ingredients for 30 minutes.
- 4️⃣Shallow fry it in oil on medium flame until both sides are golden in color and cooked (don’t over fry)\
- 5️⃣Keep it aside in the paper towels.
- 6️⃣In the same oil add whole spices (cardamom, clove, cinnamon and bay leaf) and then chopped onions.
- 7️⃣ SautΓ© for a minute and add ginger garlic crushed and green chilly until raw smell goes off.
- 8️⃣Add tomato chopped and sautΓ© until all the tomato pieces are mashed well.
- 9️⃣Add tomato puree, pepper powder and Cumin powder.SautΓ© for another 2 to 3 minutes.
- 1️⃣0️⃣Add 4 cups of boiling water, salt, dried lemon and fish sotck cube in to it.
- 1️⃣1️⃣Cook covered in medium flame for 10-15 minutes until all the water gets absorbed and the rice gets cooked well. (stir two or three times at the last stage of cooking)
- 1️⃣2️⃣Open the lid after 10 minutes of cooking.
- 1️⃣3️⃣Serve the rice and arrange the Fish pieces on top with the almonds.
- 1️⃣4️⃣Serve hot with some Raita.
