Fish Kabsa:

 









Ingredients for Marinating the Fish
🌺1/2 teaspoons Turmeric powder
🌺2 teaspoons Chilly powder
🌺1 teaspoon Pepper powder
🌺2-3 teaspoons Ginger garlic paste
🌺1 tablespoon Lemon juice
🌺Salt-to taste
🌺Oil-for shallow frying
Ingredients For Rice:
🌺2 Cups Basmati rice
🌺500g Fish Fillet or any Fish 
🌺1” Cinnamon Stick
🌺1-2 Clove
🌺2-3 Cardamom pods
🌺2 Bay leaf
🌺1/2 teaspoons cumin seeds
🌺1 Big Onion
🌺1 Large Tomato
🌺250 ml Tomato puree
🌺2 tablespoons Ginger garlic Paste
🌺2 teaspoons Garam Masala Powder 
🌺1-2 Green chilli
🌺 1 teaspoon Pepper powder
🌺1 teaspoon Cumin powder
🌺1 Dried lemon 
🌺1 Fish stock cubePeeled almonds-to garnish( optional)
Preparation:
  • 1️⃣Wash and soak basmati rice in water for 30 minutes.
  • 2️⃣Drain it and keep aside.
  • 3️⃣Clean the fish and marinate it with marinating ingredients for 30 minutes.
  • 4️⃣Shallow fry it in oil on medium flame until both sides are golden in color and cooked (don’t over fry)\
  • 5️⃣Keep it aside in the paper towels.
  • 6️⃣In the same oil add whole spices (cardamom, clove, cinnamon and bay leaf) and then chopped onions.
  • 7️⃣ SautΓ©  for a minute and add ginger garlic crushed and green chilly until raw smell goes off.
  • 8️⃣Add tomato chopped and sautΓ© until all the tomato pieces are mashed well.
  • 9️⃣Add tomato puree, pepper powder and Cumin powder.SautΓ© for another 2 to 3 minutes.
  • 1️⃣0️⃣Add 4 cups of boiling water, salt, dried lemon  and fish sotck cube in to it.
  • 1️⃣1️⃣Cook covered in medium flame for 10-15 minutes until all the water gets absorbed and the rice gets cooked well. (stir two or three times at the last stage of cooking)
  • 1️⃣2️⃣Open the lid after 10 minutes of cooking.
  • 1️⃣3️⃣Serve the rice and arrange the Fish pieces on top with the almonds.
  • 1️⃣4️⃣Serve hot with some Raita.
