Fried Chicken Biriyani:
(My Version)
Fir Marinating The chicken:
๐ท1 1/2 kg Chicken
๐ท2 tablespoons Ginger-garlic paste
๐ท1 tablespoon Chilli powder
๐ท1/2 teaspoons Turmeric powder
๐ท1 teaspoon Garam Masala
๐ท1 tablespoon Lemon juice
๐ทSalt to taste
❤️Oil for Frying the Chicken
For Chicken Masala:
๐ท2 Big Onions finely sliced
๐ท1 tablespoon Ginger-garlic paste
๐ท2-3 Green chillies finely sliced
๐ท3 Tomatoes sliced
๐ท1/2 teaspoon Turmeric powder
๐ท1-2 teaspoons Chilli powder
๐ท2 teaspoons Coriander powder
๐ท1 teaspoon Garam masala powder
๐ท4 tablespoons Yogurt
๐ท1 tablespoon Lemon Juice
๐ท1 teaspoon Pepper Powder
For Rice:
๐ท4 cups Basmati rice
๐ท10 Cardamom pods
๐ท1-2 Cloves
๐ท2” Cinnamon stick
๐ท2 tablespoons Lemon juice
๐ท3-4 tablespoons Ghee
๐ทSalt
๐ทWater
For Garnishing(optional)
๐ท1/2 cup Fried Onion
๐ท20-25 Cashew Nuts
๐ท15 Raisins
๐ท1 handful Chopped Mint & Coriander Leaves
๐ท1 tablespoon Rose water
๐ท1-2 Ghee
๐ทYellow or orange food coloring - few drops
Method:
1️⃣Clean and wash the chicken pieces. Drain the water completely.
2️⃣In a bowl, add in the chicken pieces and the items mentioned under @Marination for the Chicken”.Mix well and set aside for 30 minutes.
3️⃣Wash the rice 3 times and Soak it for about 30 minutes.
Frying Chicken:
1️⃣Heat enough oil to fry the chicken in a deep pan. Add in the chicken pieces as batches.
Fry until the chicken pieces are brown on medium heat. Remove from oil and set it aside.
Masala Preparation:
1️⃣Heat 3 tablespoon of ghee in a deep pot, add in the ginger garlic paste,green chillies and fry until the raw smell disappears on low-medium heat.
2️⃣Add in the sliced onions, saute until the onions are translucent.
4️⃣Add the turmeric powder and salt. Mix well and saute for 1 minute.
5️⃣Then add in the sliced tomatoes and saute for 2 minutes.
6️⃣Add in the chilli powder, coriander powder, garam masala,saute until the tomatoes are mashed well on low-medium heat.
7️⃣Add in the yogurt, lemon juice and mix well. Then add in the chopped mint and coriander leaves and mix well.
8️⃣Pour 1 cup of water, mix well and bring to a boil. Check for salt.
9️⃣Add in the fried chicken and mix well.
1️⃣0️⃣Cover and cook for about 15 minutes or until the gravy is completely thick on low heat. Stir occasionally.
Rice preparation & Layering:
1️⃣In a deep wide vessel, add the water and the Whole spices and Salt.
2️⃣When the water boils add in the drained rice and cook for 8 minutes.Cook until the rice is 75-80% done.
(Just take out a grain of rice from the boiling water, and
press it in between your thumb and forefinger. If the
grain breaks into 3 parts, that's the right consistency)
4️⃣Drain the water completely and transfer it over the chicken masala.
5️⃣Spread the fried onions, cashews, raisins, chopped mint and coriander leaves over the rice.
6️⃣Sprinkle ghee, rose water, food color over the rice.
Dum Preparation:
Cooking in Oven :
1️⃣Take an oven-safe dish arrange the rice,
Cover it with an aluminium foil. Seal the edges by crimping the foil.
2️⃣Preheat oven to 180°C/350°F. Place the sealed oven proof dish in the oven and bake it for 20 mins.
3️⃣When it is done, remove and keep the dish covered until serving.
Cooking over Stove top :
1️⃣Close the biryani pot with a tight lid.If you don’t have a lid cover with Aluminum Foil.
2️⃣Place the sealed biryani pot in the stove. Cook till the steam comes out for about 20-25 minutes on low flame.
3️⃣Once the steam comes out after
20-25 minutes, switch off the flame and set it aside the biryani pot unopened for 10 minutes.
4️⃣Then open the dum, just mix the rice and chicken pieces
from the bottom of the pan using a long spoon.
5️⃣Enjoy the biryani, serve hot with Raita, Pickle and Pappadam on the side.or you can make a Salad and boiled eggs.
๐ทIf you want fry some potatoes and add it on top of the rice before serving.
