Kimbula Buns or Kokku Bunis:

Kimbula Means Crocodile,I think they named this Buns Kimbula buns because it’s shape represents a Crocodile 🐊 We call it the Sri Lankan croissant🥐

kimbula buns OR Kokku buns:

(Makes 11-12 Buns)

Ingredients;

🥐500 g Flour 

🥐3  tablespoons butter or margarine 

🥐1 egg

🥐2 teaspoons yeast 

🥐4 tablespoons sugar 

🥐1 teaspoons salt

🥐1 cup warm milk and some warm water to knead 


Method:

1.combine all the ingredients to the flour except butter.

2.knead to get a non sticky dough.

3.add butter and knead for 10-15 minutes till you get a soft dough.at the beginning it’ll be sticky.when you keep on kneading butter will be absorbed by the flour and will turn in nto a very soft dough.

4.set aside to double in size for one hour.cover with a cling film or a damp cloth.

5.deflate the dough and cut into 75g-80g balls.

6.Roll each portion to a triangular shape,start rolling from the wide side tightly from the base towards the thin part(at the same time stretch the end of the triangle,continue rolling the Kimbula) roll upward tightly till the end.(you can stick the end with water).

7.Make all the buns and leave it on a parchment lined baking tray for 30 more minutes for the second proof.leave it inside the oven.(or cover with a cling film and leave it outside)

8.Roll the bun on sugar.(or you can brush the top with sugar syrup and sprinkle the sugar on top)

9.Bake at 190c for 20 minutes.


For sugar syrup: Add 2 tablespoons of sugar and 1/4 cup of water to a pan,boil it for about 10 minutes (till it turn into one thread consistency).you can refrigerate this syrup in the refrigerator if it remains.
