A delicious Sri Lankan-style ambarella curry with a lovely balance of spicy, tangy and sweet flavours. The ambarella is cooked until soft and tender, then finished with sugar or jaggery for that beautiful sweet-and-sour taste. 🌢️πŸ’š

Ingredients

  • 6 ambarella (June plum), peeled and cut into small chunks
  • ½–1 onion, sliced
  • 2 green chillies, sliced
  • 1 sprig curry leaves
  • 1 small piece of rampe (pandan leaf)
  • 1½ teaspoons mustard seeds
  • ½–1 tablespoon oil
  • ¼ teaspoon turmeric powder
  • 1–2 teaspoons chilli powder
  • 1 teaspoon salt, or to taste
  • 2 tablespoons sugar or 1 small piece of jaggery
  • Water, as needed

Method

  1. Prepare the ambarella: Peel the ambarella and cut them into small chunks. You can leave the seed in the pieces as shown in the recipe.
  2. Temper the spices: Heat the oil in a pan over medium heat. Add the mustard seeds and let them splutter.
  3. Add the rampe and curry leaves, followed by the sliced onion. SautΓ© until the onion becomes soft and lightly golden.
  4. Add the turmeric powder, chilli powder and salt. Mix well and cook for a few seconds, allowing the spices to coat the onions.
  5. Add the cut ambarella pieces and green chillies. Mix everything well so the ambarella is coated with the spices.
  6. Add enough water to help the ambarella cook. Bring it to a boil, then cover the pan and cook until the ambarella becomes soft and tender.
  7. Once the ambarella is cooked through, open the lid and continue cooking for another 5–10 minutes, allowing some of the liquid to reduce.
  8. Add 2 tablespoons of sugar or a small piece of jaggery and mix well. Cover and cook for another 5 minutes, allowing the sweet and sour flavours to come together.
  9. Turn off the heat and serve warm with rice and your favourite Sri Lankan curries. ❤️πŸ‡±πŸ‡°

🌢️ Tip

You can adjust the sugar or jaggery according to how sour your ambarella is. The perfect balance is spicy, tangy and slightly sweet
