 Soft & Fluffy Homemade Marshmallows (No-Fail)

Yield: About 30 marshmallows

Ingredients:

To bloom the gelatin👇🏻

  • 2 tablespoons gelatin (1 oz)
  • 1/2 cup water 
  • For the Syrup 👇🏻
  • 450g sugar
  • 1/2 water


For dusting:

  • 1/2 cup cornflour
  • 1/2 cup powdered sugar


Optional:

  • Food coloring
  • Tray size: 8 × 8 inch (20 × 20 cm) square tray

 Method (Step-by-Step)

1️⃣ Bloom the gelatin

Add gelatin to a bowl. Pour water over it and let it sit for 5 minutes until it becomes thick and spongy.


2️⃣ Make the sugar syrup


In a pan, add sugar and water.

Cook on medium-low heat, stirring until the sugar completely dissolves.


Let it cook further until it reaches 1-string consistency

👉 When you lift the syrup, it should form a thin thread between your fingers.

3️⃣ Add gelatin

Add the bloomed gelatin into the hot syrup and mix well until fully combined.


4️⃣ Whipping stage (VERY IMPORTANT)

Transfer the mixture into a bowl.

Attach a whisk attachment and start whipping.

Whip until the mixture becomes:


  • Thick
  • Light
  • Fluffy

👉 Correct stage: When lifted, the mixture should fall and break (not flow like liquid)

⚠️ Do not overwhip

If overbeaten, it will start setting in the bowl and become difficult to pour.


5️⃣ Prepare the tray

You can do either:


✔ Method 1:

Lightly grease the tray with butter


✔ Method 2 (better):

Grease + dust with cornflour & icing sugar mix


6️⃣ Pour & layer

Pour half of the marshmallow mixture into the tray.


👉 You can:


  • Keep it plain white
  • Or add color to the remaining mixture

Mix color into the remaining half and pour over.


7️⃣ Set

Leave the marshmallow to set at room temperature overnight

(for best texture and clean cutting)


8️⃣ Prepare coating

Mix equal parts:

  • Cornflour
  • Powdered sugar


9️⃣ Remove & dust


Sprinkle the mixture generously on top.

Remove marshmallow from tray and place onto the dusting mixture.

Dust all sides well.

🔟 Cutting

Dust your knife with the same mixture.

Cut into desired shapes.


1️⃣1️⃣ Final coating

Roll each piece in the remaining cornflour + sugar mix to prevent sticking.


1️⃣2️⃣ Storage

Store in an airtight container at room temperature.

Important Tips:

📌Do not overcook syru

📌 Do not overwhipp

📌Work quickly after whipping

📌Dust generously to avoid sticking
