Sprats Fry

๐Ÿ 100 grams sprats
๐Ÿ salt as required 
๐Ÿ Dried chilli flakes as needed 
๐Ÿ 300 grams Onion thinly sliced
๐Ÿ Rampa cut into small pieces 
๐Ÿ Curry leaves  
๐Ÿ Lime juice 
๐Ÿ Oil for frying 

Method 
๐ŸŒทRinse well the dried sprats and  keep it under hot sun to dry for couple of hours.heat oil in a deep bottom skillet and fry the sprats carefully without burning till slightly golden color.

๐ŸŒทsqueeze the onions well using hand and remove all water.

๐ŸŒทDeep fry the onions till golden color.keep aside. 

๐ŸŒทHeat a deep bottom skillet add a very little oil and add Rampa and curry leaves and dried chilli flakes lime juice  salt and saute well with very low heat, Add fried sprats  onion and mix very well and just heat them for few seconds.  Turn off the stove.
๐ŸŒทwhen it is cooled store in an airtight container.
๐ŸŒทYou can store up to two weeks.
