Sprats Fry

π 100 grams sprats
π salt as required
π Dried chilli flakes as needed
π 300 grams Onion thinly sliced
π Rampa cut into small pieces
π Curry leaves
π Lime juice
π Oil for frying
Method
π·Rinse well the dried sprats and keep it under hot sun to dry for couple of hours.heat oil in a deep bottom skillet and fry the sprats carefully without burning till slightly golden color.
π·squeeze the onions well using hand and remove all water.
π·Deep fry the onions till golden color.keep aside.
π·Heat a deep bottom skillet add a very little oil and add Rampa and curry leaves and dried chilli flakes lime juice salt and saute well with very low heat, Add fried sprats onion and mix very well and just heat them for few seconds. Turn off the stove.
π·when it is cooled store in an airtight container.
