Seeni Sambol Bread In Loaf Tin:
Ingredients for the bread dough:
๐500g Flour
๐ง
2 teaspoons Yeast
๐3 tablespoons Milk powder or fresh milk 1 cup
๐ง
1 Egg
๐1 teaspoon Salt
๐ง
2 tablespoons Sugar
๐3 tablespoons Butter or margarine
๐ง
Warm water to knead
For the glaze:
1 Egg
1 tablespoons Milk.
Method.
1.Add Flour to a bowl with sugar,yeast and salt,mix it ,add the egg,Mix it nicely knead with warm milk and warm water.knead for about 3 minutes to develop the dough.
2.Once the dough is smooth and elastic,add the butter and continue kneading until the butter is completely incorporated.
3.Knead until the dough is smooth,shiny and elastic.
4.Cover with a damp cloth or cling film and leave it aside to rise for one hour.
5.Make the Seeni Sambol filling.
6.Divide the dough into 45g - 55g Balls.
7.Keep the filling and Shape the buns as shown in the pictures.Add 1/4 - 1/2 cup of filling in each bun.
8.place them on a well greased or lined baking trays.
9.leave it aside to proof again for half an hour.
10.Apply egg mix on top and sprinkle some sesame seeds on top
11.Bake in a preheated oven at 190c for 20-25 minutes until golden brown on top.
12.Immediately after baking, whilst still hot, brush a bit of butter on the buns, then cover with a kitchen towel to retain moisture and keep them soft.
How to make the Seeni Sambol
๐บ500 g Onions thinly sliced
๐บcurry leaves
๐บ1 cinnamon Stick
๐บ4-5 Cardamom pods
๐บ2 teaspoons Chili flakes or powder
๐บ1 teaspoon Turmeric powder
๐บMaldive fish/ Some sliced and fried sausages
๐บOil
๐บPandan leaf (Rampe)
๐บ1-2 tablespoons Sugar
๐บ1 teaspoon Tamarind Pulp
Method:
1.Slice the onions finely.
2.Heat a pan.add oil.when the oil is hot add Pandan leaf,cinnamon stick,cardamom pods.
Add the Onions and salt.
3.keep stirring till onions turns slight brown.add turmeric powder,chillie flakes or chilli powder,Curry leaves,tamarind pulp,Cook in low heat.
4.Add the sugar at last.keep stirring till the seeni sambol become dark brown in color and the oil slightly separates.Add the sliced and fried sausages or Maldive fish flakes to it and mix well.
5.switch off the fire.
