Brinjal Dhal Curry:
Ingredients:
2 Cups Mashoor Dhal
3 cups of Water
1/2 Tomato chopped
2 Green Chillies
5 Garlic cloves sliced
1 teaspoon chili Powder
1/2 teaspoon turmeric powder
Salt to taste
1 cup thick Coconut Milk
Pandan leaves
Curry Leaves
2-3 Brinjals (cut as you want)
For the tempering:
2 tablespoons Olive oil
1/2 teaspoon Cumin seeds
1/2 teaspoon Mustard seeds
Sliced half an Onion
Few Curry leaves
2 Dry red chilli
2 Garlic cloves chopped
1/2 teaspoons Chili Powder
Method:
1️⃣Wash the dhal and add water.
2️⃣To the dhal add the Green Chillies,Onions,Tomato,Curry leaves ,Pandan leaf,Turmeric Powder,Chili Powder.Switch on the fire.when it boils,Close with a lid and cook until half done.
3️⃣Add One cup water to the half cooked dhal and add the Brinjals,Mix well.
4️⃣Cook for 5 minutes until the Brinjals are cooked well.
5️⃣Pour the thick Coconut Milk.add salt,boil once and switch off the fire.
6️⃣Take a small pan and add oil,followed by mustard seeds,let it splatter,add the sliced onions,when the onions are brown add the sliced garlic stir it.add the cumin seeds,dried red chili, mix well add the chili powder.switch off the fire before the chili powder turn brown.
7️⃣Pour the tempered ingredients over the cooked dhal.Mix well and enjoy.
